Support LOG_LEVEL in docker config

The container seems to be logging a lot of info messages. Allow for setting LOG_LEVEL=error. This might also involve adding support for other log levels, namely:

• TRACE
• DEBUG
• INFO
• WARN
• ERROR
• FATAL
• OFF
