docs: refresh screenshots to v1.51.x and add animated tour#1165

Replace the older screenshot set with fresh captures from the current build covering most tabs (including the newer ones: Tweaks Hub, Resource History, Settings Watchdog, Scheduled Maintenance, CLI Interface, Dark Mode Scheduler, and more), and add two short animated GIF tours under docs/gifs/. The README Screenshots section is reorganized by sidebar group and now embeds the two GIFs at the top. All captures are full-window (no OS taskbar) and redacted: opaque boxes cover the corporate Windows edition string, any username/host/IP, and the installed-app/service/scheduled-task/environment columns that could name internal software. Generic hardware (CPU/GPU model) is left visible. docs/screenshots/README.md updated with the redaction rules.
Move the feature-tour GIF above the fold (right after 'What it is') so visitors see the app in action immediately, instead of scrolling past ~600 lines of feature docs. The full 44-shot gallery and the second cleanup-tools GIF stay in the Screenshots section below.
