Use vscode-elixir-ls Elixir grammar

I noticed that my Elixir syntax when using shiki is not that great compared to VSCode.
With vscode I'm using https://github.com/elixir-lsp/vscode-elixir-ls/blob/master/syntaxes/elixir.json which has much more granular parsing.
